Scoffle Me was started by one Englishman in Bangkok with a yearning for a particular taste of home. Scones.
He wanted a proper English scone. A soft, fluffy scone with the smell of fresh butter and good flour. The kind of scone you enjoy at a picnic table with views of the English coastline on holiday. Or share with your mum over a steaming mug of tea on a grey afternoon. Scones that quietly disappear before you realise you’ve eaten two.
The problem was no one seemed to know how to make them. The only scones he could find in Bangkok were dry and crumbly, or small and stodgy, or glazed. He realised he could look forever and still never find quite what he was after. So he made them himself.
The recipe for scones is simple enough, but it took time (and a lot of flour) to really understand the process. Getting hydration levels just right. Mixing and working the dough just enough. Finding the precise bake time and temperature. Finally, they were good enough to share with friends, who came back for more. Then came back again to ask if he’d considered selling them. (He hadn’t.)
He started Scoffle Me in 2021, and since then he’s hand-formed and baked over 18,000 scones. Which is a lot of scones. It’s also enough to have discovered their most important ingredients. Really great scones require expertise and a personal touch.
